This Thai eggplant curry is my take on Gaeng Phed Moo. I’ve simplified the ingredient list slightly, but this dish still packs a flavorful punch. Feel free to add some Thai chilis to this dish according to your spice tolerance. It is important to note that Thai eggplants are quite different from the standard purple eggplants in most American grocery stores. They are much smaller and less bitter with a firmer texture. Try to use Thai eggplants if you have access to them, if not – this dish could be made without the eggplant for a more pork focused curry.
